As far as I can see, all Linux installs offered for the M2 platform are marked as Beta. Does this mean that they are not apt for “production” (i.e. private production) installs?

As far as I know beta releases sometimes do not support everything and there are unresolved bugs. But that is the same for even final releases, some final releases still contain bugs.
I would recommend you to do extensive testing before releasing it to private clients.
